Steak Fajitas (and a kitchen hack for busy moms)

The days seem shorter now, so when it comes to kitchen hacks, I love to try everything! let me share with you about this amazing new product I found on my last trip to Walmart! I wanted to make my steak Fajitas because the boys had requested them, they are so delicious and I wish I had time to make them more often.

I am so excited to have found Pop & Cook! and I think its now way up there with my favorite cooking secrets! Pop and cook pull their products from the fields, process them and flash freeze them into their trays within 90 minutes of harvest! It doesn’t get better than that for us city folks that don’t get to farm as much as we would like. Now for the fajitas, remember to start by making this delicious marinade hopefully the night before! to allow the fresh juices to tenderize your meat! trust me you won’t regret this! If you take the time to make the marinade the night before, dinner making will be even faster when it comes to actually making the fajitas.

Homemade Fajitas

Ingredients

  • 1/3 C lime juice
  • 1/4 C pineapple juice
  • 3 Tbsp Worcestershire sauce
  • 3 Tbsp olive oil
  • 3 Pop & Cook minced garlic
  • 2 tsp cumin
  • 2 tsp chili powder
  • 1/2 tsp red pepper flakes
  • 1 tsp salt
  • 1/4 C chopped cilantro
  • 3 lbs of beef of your choice
  • 1 large jalapeno
  • 2-3 bell peppers
  • 5 Pop & cook grilled onions
  • Sour cream and Salsa to taste.

Instructions

  • In a large mixing bowl, combine oil, Worcestershire sauce, lime and pineapple juices. Add cumin, chili powder, red pepper flakes, salt and chopped cilantro. mix all these ingredients and add your beef. mix it up really well and let it marinade covered for a few hours or overnight.
  • In a hot skillet, cook your beef and reserve some of the juices to use as a sauce. remove meat and cook the jalapenos and bell peppers together with a little coconut oil or any oil of your preference. after 3 minutes, add in your Pop & Cook grilled onions and let them cook until tender.
  • Use your favorite tortillas to assemble fajitas for the entire family. we love to use sour cream and salsa as well as some fresh cilantro and avocado.
