One of our favorite learning activities is cooking. The boys get to pick a meal to cook, go shopping for ingredients and then prepare it with me. It brings so much joy to both of us and it helps us learn so many life lessons along with everything else that we get to learn.

After our trip to Japan, the boys got to try a lot of different kinds of tofu, so Owen decided he wanted to go that direction.
Our Favorite super food: House Foods Tofu

We got this little sweet book called: “The Tales of Tofu from House Foods”. It’s a fun and sweet book that tells the story of an unlikely kitchen star: Tofu.
I love this amazing project and the idea behind it! To help children and families eat healthier, House Foods partnered with Melissa Rauch to create The Tales of Tofu, a free children’s book that introduces kids to this less familiar but so good-for-you food.

In the book, little Tofu didn’t think that he would be too important in the story, but he ended up being the star of the show! The illustrations are so cute! The book was just perfect for Owen, it had his attention the entire time! and even Jo came to join our party.

Included in this fun book, are some great and easy to make recipes, with step by step instructions. We chose to make the tofu tacos.

Owen kept the book right by his side and kept looking at it for directions on what to do and to make the faces that tofu was making in the book. We had a blast making them and then, after he tasted them, he said they were delicious!

Tofu Tacos
Ingredients
- 1 pkg. House Foods Tofu Extra Firm, drained, pressed and cut into 1/2 in. cubes
- (alternative option: crumbled tofu)
- 1 pkg. low sodium taco seasoning
- 12 corn tortillas
- 1 (15 oz.) can low sodium black beans, drained
- 1 (15 oz.) can corn, drained
- 1/3 head lettuce, shredded
- 1 Tbsp. oil
- Salsa to serve
- Optional Toppings
- 1 avocado, pitted and cubed
- cilantro, chopped
- lime
- cheese
Instructions
- Coat tofu in taco seasoning. Add oil to pan set to medium-high heat and cook tofu until browned. Set aside. (If crumbling tofu, add to pan and sprinkle with taco seasoning.)
- Add black beans and corn into separate pots set to medium heat. Heat until cooked through.
- Warm tortillas in a separate pan. To assemble, add tofu, black beans, corn, and lettuce. Top with avocado, cilantro, and lime juice.

Life Lessons in the kitchen

After dinner was eaten and we sat down for the night. We got to talk about the important lesson we learned from Tales of Tofu.
We talked about being true to ourselves and believing in what we are capable of doing. How doubting ourselves is not healthy and it doesn’t help anyone.
It made me happy to have the opportunity to have this conversation with the boys. Many of us go through self doubt from when we are little kids all the way to now. So it’s my hope that these conversations stick with them at least a little. And that they struggle with this a little less than I do. Being different is not a bad thing! It’s what makes us amazing.
